INGREDIENTS
1 pound ground brisket
1 pound ground sirloin
16 slider rolls
1 cup crumbled or shredded cheese of choice (cheddar, fontina, blue cheese, or goat cheese)
Salt and freshly ground pepper
For Garnish:
Caramelized onions
BBQ sauce
Mayo
Ketchup
Mustard
INSTRUCTIONS
Preheat your Twin Eagles grill to medium-high heat.
Combine the brisket and sirloin in a large mixing bowl and season with salt and pepper. Gently mix the meat together, but do not overmix. Divide the meat mixture into 2-ounce portions and shape each into a ball. Poke a deep hole in the center of each slider. Fill the hole with 1 tablespoon of your cheese of choice. Mold the meat around the cheese to enclose tightly. Gently flatten each filled slider to form a patty.
When the grill is hot, oil the grates to resist sticking. Place the sliders on the grill and cook to the desired doneness – about 3 minutes per side for medium-rare. Place the buns on the grill, cut side down, for 1 minute to lightly toast them. Serve the brisket on warm grilled buns piled with caramelized onions and your favorite spread for the ultimate slider.
